Sue's Diner: Fish Salad

Here is an unusual salad for these warm summer days, one you'll likely find few places except for Sue's Diner.

This recipe for fish salad is slightly modified from the Bohemian-American Cookbook by Marie Rosicky, published by the Automatic Printing Company (www.autoprintomaha.com). 

The version of the cookbook I had was published more than one hundred years ago. The Automatic Publishing Company is still publishing it today. The recipe is used with written permission.

Although Simons Mansion hosted most of Munsonville’s festivities, the villagers reciprocated one summer with a celebration in honor of John and Bryony Simons, with John providing the entertainment. Sue's Diner: Bohemian Biscuits with Jam

Today's recipe is most likely older than both of our ages together (mine and whoever is reading this - and if you're young enough, triple that!).

It's adapted from the Bohemian-American Cookbook by Marie Rosicky, published by the Automatic Printing Company.

Side note: My mother owns a much older version of the current cookbook. It's still in print and the company gave me permission to modify some of the recipes and republish them as long as it approved the modifications.

Here is the back story of this really fun cookbook (along with how you can get your own copy).

The recipe is referenced in chapter 27 of Bryony. In that chapter, (spoilers), Melissa develops a crush on Henry and boldly approaches him for a date. So Henry seizes his chance to enlarge Melissa’s world and gives her a kaleidoscope evening of theater, historical landmarks, and peasant food.

The amount of ingredients is extremely vague (not unusual for the time period), so you might need to experiment with a batch or two.

The result reminded me of English muffins and very worth the efforts.

Sue's Diner: Goose Giblet Soup

This week's recipe is Goose Giblet Soup, the very soup Orville Parks spilled when dining at Simons Mansion, staining the rug.

Sue's Diner: Tea With Eggs

This week's recipe is another one of those recipes that shows how the BryonySeries cookbook: Memories in the Kitchen: Bites and Nibbles from "Bryony," which is a permanent fundraiser for Big Brothers Big Sisters of Will and Grundy Counties, is as much culinary history as it is culinary kitchen adventure.

This recipe is a combination of two tea recipes from The Bohemian-American Cookbook by Marie Rosicky, published by the Automatic Printing Company ((www.autoprintomaha.com) and used with written permission.

Here is the reference from "Bryony."

Henry brought Melissa the tea in a beautiful cup and saucer. The background was cobalt blue; the edges were trimmed in gold. The inside of the cup was pure white and boasted one, painted, purple rose near the lip.

“Be careful,” Henry said. “It’s hot.”

Melissa cautiously tasted the foaming tea, nothing like the tea bags at home, and tried not to make a face. What did Henry put in it? Didn’t Victorians make normal food?

Below is a teacup Timothy bought for me from Evilena's Red Dresser in Frankfort for Mother's Day a few years ago. The teacup is filled with dried purple rose petals, a "Henry" motif.

We have actually not tried this recipe. I don't like eggs, and Rebekah won't like them in her tea.

Sue's Diner: Roast Rabbit With Sour Cream Gravy

Today's recipe for Roast Rabbit with Sour Cream Gravy is one we haven't tried at home - yet.

In fact, I've only ever eaten rabbit once. I was four years old, and my family and I were eating at their neighbor's house two doors down. I was amazed at eating rabbit (I loved seeing rabbits hop in my yard) although my mother said I initially thought I was eating chicken.

Although kale fritters (with bacon) sound as if they're from a decade ago when kale was super trendy, they're not.

This week's recipe is authentically nineteenth century and originally featured in the Bohemian-American Cookbook by Marie Rosicky, published by the Automatic Printing Company (www.autoprintomaha.com).

The recipe also appears in the BryonySeries cookbook: Memories in the Kitchen: Bites and Nibbles from "Bryony," which is a permanent fundraiser for Big Brothers Big Sisters of Will and Grundy Counties.

Sue's Diner: Marjoram Potatoes

Although Simons Mansion hosted most of Munsonville’s festivities, the villagers reciprocated one summer with a celebration in honor of John and Bryony Simons, with John providing the entertainment.

One of the items on the refreshment table as these marjoram potatoes, one of the recipes I couldn't wait to try when I started collecting recipes in 2009. I'm not a huge potato-eater, but when I prepared these for the first time last weekend, I was hooked. I definitely will cook them again.

Bohemian Biscuits with Jam

Believe it or not, picky Melissa ate every bite of the dishes set before her. However, if she had known what tripe was, she might have selected the turtle soup.

Bohemian Biscuits with Jam

A piece of butter
2 cups tepid milk
2 eggs
A pinch of mace
Salt
Compressed or dry yeast dissolved in tepid water
Flour
Lard (optional)
Prune jam
Cottage cheese or grated marzipan
Melted butter or thick sweet cream


Melt butter in milk, add eggs, mace, salt, yeast and enough white flour to make dough softer than for dumplings. Beat until smooth, let it rise, turn out on a floured board, roll and cut into rather large biscuits. Let them rise, then bake on both sides or fry in lard. Spread with prune jam, sprinkle with cottage cheese or grated marzipan and melted butter or thick, sweet cream.

Authentic Bohemian Rye Bread

Rye Bread

From the Bohemian-American Cookbook by Marie Rosicky, published by the Automatic Printing Company (www.autoprintomaha.com).

3 large peeled potatoes
2 quarts water
1 cake compressed yeast, dissolved in a little tepid water
½ cup flour
Salt, pinch
Rye flour

Boil potatoes the evening before baking. When boiled until nearly dissolved, press through a sieve, and if the water has boiled away, add enough cold water to make 2 quarts, then add flour and yeast. Beat, and set in a warm place overnight. In the morning, add salt and enough rye flour to make a batter as for pancakes, and let it rise 30 minutes. Then pour on a floured board, add more flour and knead until the dough does not stick. Place in the bowl and let it rise 15 minutes. Knead again, let it rise a short time, then form into loaves, place in pans, and when they have risen once their bulk, bake.

Fried Fish Cutlets


At Melissa’s first dinner at Ann Dalton’s house, she is amazed that the baked fish tastes a lot like fish sticks. At any rate, Mrs. Dalton’s method of making fish sounds exactly like Fried Fish Cutlets in the Bohemian-American Cookbook by Marie Rosicky, published by the Automatic Printing Company (www.autoprintomaha.com).

Fried Fish Cutlets

Fresh fish, any kind
Salt
Pepper
Flour
Milk
Egg
Lard
Sliced lemons
Fresh parsley

Cut into slices any kind of fresh fish, dust with salt and pepper, dip into thin batter (flour, milk, and egg), and fry in hot lard. Arrange on a platter, surround with sliced lemon and parsley, and serve.
