Sue's Diner: Haluski

I was instroduced to this week's recipe for haluski many years ago from my first husband's Ukranian family and extended church family.

It uses the simplest of ingredients in a most delicious ways. Try it and see!

Amerika Adamowski submitted her version for the  BryonySeries cookbook: Memories in the Kitchen: Bites and Nibbles from "Bryony," which is a permanent fundraiser for Big Brothers Big Sisters of Will and Grundy Counties.

The recipe is referenced in the novel Bryonywhere the protagonist, a 1970s teen named Melissa Marchellis, encounters it at a potluck dinner for her grandmother's memorial luncheon.

I've tasted (and prepared) many variations of this recipe over the years. Some substitute cabbage for the potatoes. Others use mash the potatoes and use elbow macaroni.

But try the recipe this week. It will be gone some time next week. A new recipe will take it's place.

This week my mind is partly on all foods Easter European since we are Eastern Orthodox and this is our Holy Week - and because my children are half Ukrainian and I am half Bohemian.

Sue's Diner: Haluski by Amerika Adamowski

Neither Melissa nor Brian felt at ease during the unfamiliar church services in memory of their grandmother. The array of delicious food at the potluck luncheon that followed was more appealing. This was especially true for Brian, who had heaped his plate high with many of the dishes, including the haluski.

Haluski


Probably every Slavic family has a variation. We made ours as part of dinner tonight, while remembering Mary Minarch, Amerika's grandmother, who first prepared it for our familiy many years ago. 



Haluski:
By Amerika Adamowski

1 pound bow tie noodles, cooked
1 pound butter or margarine
1 large yellow onion, cut into small pieces
Fresh cabbage, thinly sliced (optional)
3 large brown potatoes, peeled, cut into pieces and boiled until soft
Salt and pepper to taste
Cottage cheese or sour cream to top

Simmer butter, optional cabbage and onions until onions are caramelized. Add bow ties, potatoes, salt and pepper, and mix. Serve topped with cottage cheese or sour cream.
