Sue's Diner: Lemon Chicken with Caramelized Onions

Today's recipe was a contribution from Alison Peloquin for the BryonySeries cookbook Memories in the Kitchen: Bites and Nibbles from "Bryony," which is a permanent fundraiser for Big Brothers Big Sisters of Will and Grundy Counties.

The recipe is called Lemon Chicken with Caramelized Onions - and it's one of my favorite recipes from the cookbook.

And it's perfect for the times you need to quickly prepare a nutritious, delicious dinner.
