Here is an unusual salad for these warm summer days, one you'll likely find few places except for Sue's Diner.

This recipe for fish salad is slightly modified from the Bohemian-American Cookbook by Marie Rosicky, published by the Automatic Printing Company (www.autoprintomaha.com). 

The version of the cookbook I had was published more than one hundred years ago. The Automatic Publishing Company is still publishing it today. The recipe is used with written permission.

Sue's Diner: Roast Stuffed Opossum

This week's recipe is featured for only the second time on the Sue's Diner page - mostly because we've no inclination to try it. 

Ron actually grew up eating opossum and never liked it, too greasy, he said. 

So we have a photo of bacon to share (because bacon is used in the recipe) but no actual photo of the completed dish. But for those willing to order exotic meat and try it, we have a recipe for you.

My mother owned the little cookbook where this recipe first appeared and lent it to me when I was creating the BryonySeries cookbook. The cookbook is out of print, but I still reached out to The Henry Ford for permission to use some of the recipes and written permission was granted.

Many of those "famous eating places" no longer exist. So it's kinda cool that we preserved a piece of culinary history in a cookbook that pays homage to history.

Sue's Diner: Homemade Pierogies

This week we are featuring a recipe that is a favorite in our family: homemade pierogies.

A pierogi is simply a stuffed dumping. Pierogies are popular in Eastern European cuisine. Some cultures call them pirohi.

Traditional pierogi fillings include potato and sauerkraut, but you may use any filling you like.

I learned how to make pierogies from a cookbook when my oldest son, now forty-four, was about eighteen months old. I always included the kids in making them. 

The ones from the cookbook were dry and heavy, so we adapted the recipe through the years.

My two preschoolers (Sarah and Joshua) helped me make two hundred of them one afternoon in the 1980s when one of our friends was being ordained to the priesthood.

I even had a regular customer for a short time, which provided some extra money for me.

Sue's Diner: Candy Cane Brownies

By now, most Christmas candy is now a pleasant memory.

But you might have a few leftover candy canes, especially if you encountered Ed Calkins, Steward of Tara, over the holiday season, and he was generous in distributing them (as he typically is).

So use up those leftover candy canes to make room for Valentine's Day candy by preparing these extra special Candy Cane Brownies.

The recipe is simple enough for a child to assemble with adult guidance and supervision.

Sue's Diner: Best Griddle Cakes

This week's recipe is for Best Griddle Cakes, which is adapted from Miss Beecher’s domestic receiptbook: designed as a supplement to her Treatise on domestic economy.

 The recipe also appears in the BryonySeries cookbook Memories in the Kitchen: Bites and Nibbles from "Bryony."

These are, indeed, some delicious griddle cakes. But are they really "the best?" Try them and see.

The secret to their delicious taste, I believe, is one extra ingredient and one extra step.

The cookbook is available on Amazon and is a permanent fundraiser for Big Brothers Big Sisters of Will and Grundy Counties.

This recipe is also referenced in the Bryony, the first book in the young adult "drop of blood" vampire trilogy.
