Split Pea Soup By Sarah Stegall

After Melissa shares her feelings for John, she worries all day about his dispassionate reaction. Her mind felt as thick as Simons Mansion pea soup. Here is a modern version of that soup.

Split Pea Soup
By Sarah Stegall

1 ham bone
2 cups ham, cut into bite-sized pieces
1 bag split peas
6 carrots
8 cups chicken broth
2 cups water
1 packet sanza goya spice (optional)
2 tablespoons black pepper

Rinse peas and set aside. Boil the bone to remove any extra meat you’d like. In a large pot, add chicken broth, water, peas, ham, pepper, and spice, if desired. Bring to a boil. In the meantime, peel and cut carrots into bite-sized pieces. Add to pot, cover, and simmer until peas are tender. This could take up to 1 ½ hours, so give yourself plenty of time. Serve with crackers. Yield: 6 servings.
