Stewed Fruit with Cream

Beecher’s domestic receiptbook: designed as a supplement to her Treatise on
domestic economy.
2 or 3 peach leaves or a vanilla bean
1 quart cream or milk
Sugar
4 eggs, separated
Fruit, your choice
Boil the peach leaves or vanilla bean in the cream or milk
till flavored. Strain and sweeten it, mix it with well-beaten yolks; then,
while heating it up, add the whites cut to a froth. When it thickens, take it
up. When cool, pour it over the fruit or preserves.
