This recipe is adapted from Miss Beecher’s
domestic receiptbook: designed as a supplement to her Treatise on domestic
economy.
Browned Potatoes
Boiled potatoes
Salt
Butter
Cream or milk
Mash potatoes fine, season with salt and butter, and a
little cream or milk, place them in a dish, smoothing and shaping the top
handsomely, and make checks with a knife; then brown them in a stove, or
range-oven, and they are excellent.
