With the Popularity of Kale Comes...


 Kale Fritters

1 head kale
2 onions, minced
Minced bacon
2 eggs
1 cup bread crumbs
¼ teaspoon mace
Salt and pepper, to taste
Bacon fat

Boil kale until tender, then chop fine, add onions fried with bacon, eggs, bread crumbs, mace, salt and pepper. Mix and make fritters and fry in bacon fat.
